    I am seeking for differences of hen egg and emu egg. My major interest is: how emu egg can be applied to processed food? What is the advantage to use emu egg instead of hen egg? My goal is adding more value to emu eggs to promote emu industry in Hokkaido.

    My other current interest is screening of daily bacteria from local environment. My goal is to utilize them for food fermentation to produce local specialties.
